Student biryani - Famous biryani of Multan

Student biryani is easy to make:

Student biryani

Student biryani is really an amazing dish which is very famous in Multan area in Pakistan, specially where it is really located - near shah shams darbar ! In this session we will discuss about the making process of student biryani step by step! Before going into depth we should discuss about it's ingredients which are:

Ingredients of Student biryani:

01. Two kg of Sela rice,
02. Two table spoon of cooking oil,
03. One cup of vineger (sirka)
04. Four big table spoon of Salt
05. One chicken Full
06. approximately half kg of cord (dahee)
07. Two table spoon cilantro (Hara dhanya)
08. Eight to ten green chili (mirch)
09. One cup of fried onions
10. One cup of ginger and garlic (each)
11. Two table spoon of red chilli 
12. Five tomato's
13. Five to six table spoon of kasoor e methey
14. One Pack of Shan bombai biryani masala
15. Two table spoon of Imli
16. Danya and podina as well
17. 250 gram or 250 mili litre of vegetable ghee or Oil
18. Acetic acid (tattri)
19. Lemon juice 
20. Biryani colour ( zarda , red and yellow)
21. Star anise (badyaan k phool)
22. Kewra essence

Now take a look at the required items and get some of them with extra quantity if you want to make biryani in more quantity:-) always remember that no one can tell you directly what to do because every person have separate situations and he works in a separate frame so during making biryani you should have some creativity to manage biryani in thin conditions!
Now without any further information let's get started with making it:

Directions and Procedure of Student biryani:

Note that we will make student biryani in some simple steps:

1. Making rice ready !
2. Preparing Qourma for it !
3. Mix them in a proper way !

Step one : Making Rice ready:

-Put the 2 kg of rice in water for 1 or 1 and half hours:-)
If you have not too much time for this then you can put the rice in warm water for 20 minutes!
- Now let's go to next step while the rice is in water still, Take water in a pot and then make it hot so that we could proceed further.
-After five minutes put the two table spoon cooking oil in it. 
-Add star anise( badyaan k phool)
-Put one cup vinegar (sirka) in the hot water
-Disolve the four big table spoon salt
-After two minutes add your rice in this mixture
-After seven or eight minutes check your rice hardness, if it's soft then just turn off your flame or if it's not soft as you want then let the fire burning!
Remember that biryani rice should little harder then traditional pulao ! It's the beauty of student biryani.

Step Two : Making Qourma:

Qourma

First step of making a good Qourma is to grind 
Tomatos, ginger and garlic, and Green chillies together and make a soft paste of it. 
After making a soft paste now let's go to the next step which is;
- Take a pot and add two cups of Vegatable ghee or cooking oil in it but as recommendation I will suggest you to put ghee inside it because ghee have some extra taste in it:-)
- let the oil or ghee go hoter and then add your paste of ginger and garlic etc.
- After sometime add chicken in it
- wait approximately upto five minutes and then add your biryani masala of Shan (recommended)
- Now add chillies, danya and Imli
-After three to five minutes go with tatri of one spoon 
- Put some kewra essence
- Add one table spoon of lemon juice if you have 
- After three to four minutes add some zarda couler ( not yet traditional biryani but this is student biryani)
- Add dahi (cord) in it
- After couple of minutes( from 18 to 20 minutes) when your mixture is now seems to be ready add your brown onions and during this all process of making Qourma remember that you should continue on mixing it well and don't try to break the chicken pieces because at this conditions it's now soft enough!

Your Qourma is ready!  Now let's go to the third step which is very simple but technical:

Step third : Mixing Qourma and rice in a proper way:

Mixing Qourma and rice is also a technique and it's not as simple as we take it:
After preparing of Qourma and rice you should take a pot and then place it on flame and put a layer of oil in it remember that it's only for making it lubricant not too much :
Make a thick layer of rice in pot and then make a thin layer Qourma on it,
Now again make a thick layer of Rice and thin layer of Qourma and so on.....
After making layers on upon another in last put dnya and podina along with a spoon of biryani masala in it.
Put a thick metal on flame and then place your pot on it and allow a little flame to it 
Let it 10 to 12 minutes on flame;
Turn off flame and take a plate
From one specific side mixx it and serve:
